Sesame and Scallion Chicken Salad

This fun, low fat and flavorful Asian twist on a classic American favorite is easy to put together, quick, delicious and excellent for a quick luncheon, a holiday party, a potluck at work or any other occasion.

You will need:

  • 4 boneless chicken breasts, cooked a day ahead
  • Sesame oil
  • Sesame seeds to taste
  • Olive oil based mayonnaise of your choice
  • 3/4 cup chopped scallions
  • Garlic powder, salt and black pepper to taste

The chicken breasts for this recipe should be cooked a day ahead. Begin by marinating your boneless chicken breasts in a light coating of sesame oil for about an hour. When the chicken breasts have marinated, preheat the oven to 375 F. Place the chicken breasts in an oven safe Pyrex dish and bake them for about 30 minutes or until cooked through and tender. Remove them from the oven and allow them to cool to room temperature. Cover the Pyrex dish and refrigerate the chicken breasts overnight to let them get nice and cold.

The next day, begin by shredding your chicken breasts. You can use your hands, two forks or a food processor. Make sure the chicken is in bite-sized pieces. When your chicken is the right size, chop your scallions up and add them to the mixture, tossing it with your hands. When the chicken and scallions are thoroughly mixed, add sesame seeds to taste and mix them with your hands as well.

When your chicken, scallions, and sesame seeds are mixed in, it is time to add the mayonnaise. Everyone likes a different amount of mayo in their chicken salad, so this is something that should be left up to the person making the recipe. However, keep in mind that some sesame oil will also be added as a finishing touch, so you will not want to make the chicken salad overdressed. Add your preferred amount of mayo and blend thoroughly.

Then, it is time to add sesame oil. Once again, the consistency of the dressing for a chicken salad should depend on what the person eating the salad prefers. Any amount from 2 tbsp to 1/4 cup is an acceptable amount depending on your taste.

Mix the salad together thoroughly after the oil is added. You are almost done! You must then add salt, pepper, and garlic powder to taste. Start by adding only a little of each one, mixing and tasting. When you find the right flavor, you are ready to serve.
